Midweek Meals: Whole Chicken in a Slow Cooker


Midweek meals slow cooker whole chicken



When I was first introduced to the idea of cooking a whole chicken in the slow cooker I was a little sceptical; I’ve cooked joints of meat in there before so why wouldn’t I be able to cook a whole chicken?

I’m not the type of person who wants a roast dinner during the week; although I sometimes crave the meat, I just don’t want everything else that comes with it after spending a whole day in the office. Not only do I not have enough hours in the day to cook one during the week; I simply don’t have the inclination.

Cooking the chicken in the slow cooker solved all my problems. The chicken would be cooked my the time I got home, all I have to decide is what I’m having with it, SW chips, salad, pasta; the world is your oyster. The chicken was unbelievably moist and tender. Now I’ve made it in the slow cooker I never roast a chicken again.

Perfect slow cooker chicken
 

Ingredients:


  •  2 sprigs of fresh rosemary
  • 2 lemons, cut into wedges
  •  4 cloves of garlic
  • 1 large whole chicken

Cook Time: 4 Hours
Servings: 5-6 servings

 

Method:

 
  •   Remove any giblets from the chicken and stuff it with  the rosemary, garlic and lemon wedges.
  • Place the chicken, breast side down in the slow cooker. You won't need to add any extra liquid.
  • Cook on high for 4 hours or on low for 7 hours, or until the chicken is tender and falling off the bone. Remove from the slow cooker and serve.

Once cooked I removed all the skin from the chicken and shredded all the meat; making it Slimming World friendly, I also managed to get three more meals out of the chicken!

Meal Plan Monday & Weigh In Week 11

The training and new out look seems to be paying off. Weigh in day on Friday and  I have lost 1lb. To some that's not a lot, but that takes me to 11st! so far I've lost 1stone by following the Slimming World Plan! I'm absolutely gobsmacked; I've never eaten so much in my life!

Baking with a 3 year old: Why it should never be done


I had to write this post while the trauma of it all is still fresh in my mind.

Every time I bake with Little Miss I promise myself  I will never do it again. Not remembering previous events; weeks later I decide  to repeat the process thinking it would be a nice mother daughter activity. I then get stressed because the batter is all over the work tops and not in the cases; and promise myself that there will never be a repeat performance.

Meal planning & weigh in week 10

Its weigh in Day!!!!

This week I’ve found myself being a little less obsessed with Slimming World. Prior to this week it felt like all I ever did was think about food; I honestly don’t think there was a minute where I didn’t think about it, and when I had little slip ups I was super hard on myself, I've almost given up a few times.

So last week I decided to try something different; I made myself a promise.

I decided to relax about the whole diet, if I had a little hic up then so be it, tomorrow is another day.  I think it’s helped that I am now making healthier choices when eating out. I would always go for the burger and fries option; not any more. I’ve found myself opting for delicious fresh salads, lean steaks (without the sauce) and jacket potatoes. I don't have to be so strict with myself; I can have little treats and still be 'On Plan'.

All these little changes appear to have paid off; this week I’ve lost three pounds!

I've also decided to plan my meals for the week ahead; another way of keeping a food diary and hopefully it will keep me motivated. 

Saturday - Steak with roasted Portobello mushrooms and tomato
Sunday: Gammon salad
Monday: SW meatballs with homemade sauce
Tuesday: Omelette
Wednesday: Gammon, eggs and baked beans with mushrooms.
Thursday: Chicken Fajita in a Bowl
Friday: SW Meatballs with spinach in homemade tomato sauce

Midweek Meal: Slow Cooker Curry

 
We all lead busy lives; and if any of you are regular readers you will know how much Little Miss and  I like healthy meals during the week,  you can find various other recipes in the Midweek Meals section.
 
I didn't always have time for this and I was relying too much on processed foods; but when a friend gave me her old slow cooker I never looked back. Home cooked family meals with very little effort...My kind of cooking.

I am always in a rush in the morning; no matter how organised I am by the time I've got Little Miss ready its time to run out of the door.

Weigh In Week 9

 
Last week was a brilliant week for weight loss while following the Slimming World diet.  I lost two pounds; but that's probably because Little Miss had been ill most of the week so I didn't really eat much the whole week.

Midweek Meal: Mini Frittata

Every Sunday I make a batch of these mini Frittatas and I store them in the fridge to nibble on during the week, They are perfect to take into work to have as lunch or the ideal breakfast on the go if you are running late They can be frozen; although they have never lasted long in my house to freeze.

A weekend At The Beach



What an amazing weekend!
 
Fed up with spending the whole weekend indoors we decided to venture out the beach; it was practically deserted; which was a blessing seeing as this was the first time I had taken Little Miss the beach on my own before.

Anxiety and Me


I gone through some major life events in my 39 years. I served in the military for the last 18 years; had tours all over the Gulf, including Afghanistan. I been married twice, moved homes so many times I've lost count and most importantly became a mother aged 36.

I also suffer from stress and anxiety. I'm not ashamed to admit it; I've only recently been diagnosed, I'm not going to hide from it. Stress and Anxiety do not define who I am. I can say that today; because today is a good day, ask me again tomorrow and you may get a different response.

Weigh In Week 8

No I didn't forget to post an update from last weeks weigh in; I was too ashamed. It was the kick put he backside I needed to get back on track.....I had a two pounds gain. 

This week I was back on plan; although if I'm totally honest I didn't follow 100%. So the one pound loss of this week has given me the motivation I need.

Midweek Meal: Hidden Vegetable Pasta sauce
