Simple Chicken Curry - Slimming World Friendly


I've been off the Slimming World wagon for almost three months now, its my own fault. I took part in a charity hike in September and ended up with a trapped nerve in my back, resulting in a few weeks off work and being unable to drive. Feeling totally miserable I decided to wrongly drown my sorrows in food.

I decided to jump onto the weighing scale today, my clothes we feeling a little tight, so I decided to torture myself and see just how much I'd gained. Well enough is enough, time to head back to my trusty Slimming world.

Supper filling and full of speed foods, this curry is Syn free!

Ingredients:

2 red peppers, deseeded and roughly chopped
4 skinless chicken breasts
½ red onion, roughly chopped

Half a packet of spinach
1 x 2cm cube ginger, chopped
5 garlic cloves, crushed
1 tsp ground coriander
2 tsp ground cumin
½ tsp turmeric
A pinch of cayenne



Method:

Add all the ingredients to the slow cooker, I add the chicken breasts whole and place on top of the onion, the remaining ingredients on top of the chicken.
Cook on low 6-8 hours.
Just before serving remove the chicken breasts and shred using two folks, once shredded add back to the slow cooker.
Serve with rice or Sliming World chips
