Ingredients:700g potatoes, peeled and chopped
1 large leek
1.2 litres chicken stock
2 tbsp mixed herbs
Salt and pepper to taste
Method:Chop the potatoes and leeks and add them to the slow cooker.
Cover with the stock and herbs and season to taste.
Cook on high for 1-2 hours or until the potatoes are soft, once the potatoes are soft bend using a hand mixer.
