Slimming World Friendly Leek & Potato Soup

Now I'm back to work and in the gym I need something quick, easy and filling during my lunch break. Over the weekend I decided to make a large batch Slimming World friendly leek and potato soup in my slow cooker; I ate half and froze the remained for later use. Best of all it's Syn free!

Slow cooker leek and potato soup

Ingredients:

700g potatoes, peeled and chopped
1 large leek
1.2 litres chicken stock
2 tbsp mixed herbs
Salt and pepper to taste

Method:

Chop the potatoes and leeks and add them to the slow cooker.
Cover with the stock and herbs and season to taste.
Cook on high for 1-2 hours or until the potatoes are soft, once the potatoes are soft bend using a hand mixer.
